Tofu Skewers with peanut butter sauce
This will be my go-to BBQ food for this summer, I'm already hyperfixated on this.


Servings: 4 portions
Ingredients:
Tofu:
4 wooden skewers, soaked in warm water for 20–30 minutes
1 block firm tofu (e.g., 270 g plain Jalotofu)
Tofu Marinade:
2 tbsp soy sauce
½ tbsp maple syrup or agave syrup
½ tsp garlic powder
2 tsp sriracha
1 tsp rice vinegar
Spicy Peanut Sauce:
2 tbsp smooth peanut butter
Juice of ½ a small lime
1 tbsp soy sauce
1 tsp maple syrup or agave syrup
1 tsp sriracha (or more for extra heat)
½ tsp rice vinegar
Instructions:
Make the Peanut Sauce:
Mix all the spicy peanut sauce ingredients in a bowl until smooth. Set aside.Prepare the Tofu:
Cut the pressed tofu into cubes roughly 2.5 x 2.5 cm (1 inch).Marinate the Tofu:
Mix all the marinade ingredients in a bowl. Brush or toss the tofu cubes in the marinade. Save the extra marinade for basting during cooking. You can leave the tofu cubes in the marinade while waiting for the grill to heat up.Assemble the Skewers:
Thread the tofu cubes onto the soaked skewers, leaving a little space between each piece.Cook:
Heat a grill or skillet over medium heat. Place the skewers on the grill/pan. Cook for about 5 minutes. Brush with more marinade if you like (optional), turn the skewers, and cook another 5 minutes or until the tofu is crispy on the outside.
To Serve:
Remove the skewers from the heat and serve with the spicy peanut sauce, sesame seeds, and grilled potatoes or other BBQ-style sides.
