Tofu Quesadillas

These are really easy quesadillas, the tofu just needs a minute on the pan to become crispy

Servings: 4 portions

Ingredients:

  • 1 package of tofu (e.g., plain Jalotofu, 270 g)

  • 1 container of fresh tomato salsa

  • Grated cheese

  • 1–2 avocados or a ready-made guacamole pack

  • Tortilla wraps

  • Sriracha rub (e.g., Poppamies brand) or taco seasoning

  • Oil

Instructions:

  1. Pat the tofu dry and cut it into roughly 1 cm cubes. Place the cubes in a frying pan over medium heat with a small amount of oil right away so they have time to crisp up. Once the tofu has dried out a bit, add a little more oil and either the sriracha rub or taco seasoning. It can take about 15–20 minutes for the tofu to become crispy when cooked at a moderate heat.

  2. Once the tofu is fairly crispy, warm a tortilla wrap in another pan. Add grated cheese, salsa, tofu, and avocado or guacamole on top.

  3. Serve once the cheese has melted.
