Meatless balls and oven vegetables
These are a stable in my freezer, for whenever I don't have any food in the fridge, or if I don't have time or feel like making anything complex.


Servings: 4 portions
Ingredients:
1–2 packs of vegetarian meatball-style patties (e.g., Apetit brand), depending on hunger level and number of eaters
Frozen vegetables (e.g., mixed veggies like beans and Brussels sprouts—or any vegetables you like!)
Potatoes as a side (optional)
3 tbsp olive oil (or more, depending on how many vegetables you use)
Salt and pepper to taste
Instructions:
Spread the frozen vegetables on a baking tray or in an oven dish. Drizzle generously with olive oil and season with salt and black pepper.
Cook the vegetables and meatballs in the oven according to the package instructions.
If you like, you can also prepare potatoes as a side—mashed, roasted, or boiled—based on your preference.
