Hulk Pasta

At least that's what I call this pasta to my 3 year old. This recipe takes less than 10 minutes!

Servings: 4 portions

Ingredients:

  • 100 g frozen spinach

  • 250–300 g soft tofu (e.g. Jalotofu)

  • 200 g frozen peas

  • 3 tbsp Parmesan cheese

  • 1.5 tbsp lemon juice

  • 1 tbsp olive oil

  • ½ dl (about 3 tbsp) pasta water

  • Salt and black pepper to taste

  • 300–350 g pasta

  • Parmesan and sesame seeds for serving (optional)

Instructions:

  1. Cook the pasta in a separate pot according to the package instructions. Drain the pasta and save a bit of the cooking water.

  2. Thaw the spinach and peas according to the package instructions.

  3. Add the tofu, Parmesan, lemon juice, olive oil, salt, pepper, and the thawed peas and spinach to a bowl. Blend with an immersion blender until smooth (or at least smooth enough to be kid-friendly).

  4. Mix the pasta with the sauce, and add a little of the reserved pasta water if the sauce feels too dry.

  5. Taste and adjust seasoning if needed — this sauce tends to absorb flavor well, so it might need more seasoning than usual.

  6. Serve immediately (optionally topped with Parmesan and sesame seeds).
