8 minute cottage cheesesalad

You can make this salad in the time it takes the pasta to boil. I make this a lot when I'm working from home.

Servings: 1 portion

Ingredients:

  • Salad greens (I often use ready-made salad bags, including shredded veggies)

  • Cucumber

  • Tomato (or other seasonal vegetables)

  • About 200 g cottage cheese (I prefer the creamy kind for salads)

  • About 100 ml (about ⅓–½ cup) Rummo whole grain fusilli (or substitute with potatoes or quinoa)

  • A handful of mixed salad nuts or other nuts for topping

  • Olive oil and freshly ground black pepper to taste

Instructions:

  1. Boil the pasta in salted water.

  2. While the pasta cooks, prepare the salad.

  3. Once the pasta has cooled down (either by rinsing with water or chilling in the fridge), add it on top of the salad. Season with olive oil and black pepper!

Pro tip: If you finish making the salad before the pasta is ready, use the time to wipe down the kitchen counters or load the dishwasher!
